Visiting Finland was one of the most unforgettable trips in my life. The first time was during the summer period and I discovered that it is definitely more possible to meet a reindeer than a human over there. It was, most probably, because I entered Finland from up north. Mia and I were driving through endless forests and stopped over endless lakes. This endless part was awesome.

The next time I visited Finland, it was winter and there was a lot of first times in my life that happened over there. First aurora lights visible in the sky, first -32*C temperature, first night snowy and cold safari, first husky adventure, first time I really wanted to sit in the sauna for hours to warm myself up. Check out my Finland with a toddler post for a more detailed version.

Since then I have a soft spot in my heart for Finland. This country is incredibly beautiful, the people friendly, reindeers so cute, huskies fast like a wind. I’ve met beautiful people in Finland and I am grateful for knowing them.

Finland has some delicious meals served with passion. One of them is a reindeer steak. It is delicious, but after chasing these sweet animals through the snow with a carrot in my hand, I am not the biggest fan… There is another delicious meal that I like and apparently to almost each Finn person it brings memories of childhood. I am taking about Pannukakku. You may know it as a Dutch baby or under a different name, but I will tell you this… If you feel like a pancake and you don’t feel like frying at the same time, this is for you! You should serve it with a jam, but I did not have it in my fridge, so I chose pistachios. Mia was not super happy about my choice, she totally preferred me going to a store for her favourite strawberry jam, but since the store is about 5 km away from our place, she had to accept my authority as a lazy adult. One day she will stand in front of the same choice and she will understand me and maybe even set out an example from this story. Who doesn’t like to push responsibility for our laziness on someone else, heh?

If you are curious about Finnish breakfast , check Sini’s recipe for Korvapuusti. I had it made by her and it is mind blowing kind of delicious.
